
the perfect 10 min meal that I make at least 3x a week all summer
Boil water for the noodles and slice up some cucumber, scallion, sweet peppers for color (honestly any fresh crunchy veg works)
When the noodles are done, splash in an ice bath and drain
For a creamy dressing I mix some tahini and ponzu, a little wasabi for a kick. Or sometimes I just buy soba tsuyu
Also it happens to be vegan but could easily be served with a protein of choice
